Today I attended the end of the season CSA party at Brooklyn Exposure in Crown Heights. It was a good time and was nice to meet Farmer Fred and Mrs. Farmer Karen. They donated a beautiful basket of produce for the raffle. I was hoping I’d win it! Afterwards we continued the party at Minor Arcana. A perfect way to spend a Sunday afternoon.
After going on a wild goose chase for chicken stock I made a soup using some CSA cabbage for this week’s lunch. You don’t often come across naturally purple food so this is a fun one.
1 onion diced
2 cloves of garlic minced
1 head of red cabbage chopped
1 leek chopped
4 cups chicken stock
2 tablespoons soy sauce
Heat a tablespoon of olive oil in a large pot over medium heat add onion and salt. Saute until translucent, add garlic and cook briefly. Add leeks, cabbage and some salt and pepper cook until tender.
Add chicken stock, cover and simmer for about 45 minutes. Puree soup until smooth. Return pot to heat add soy sauce and simmer for 5 minutes. Enjoy!
