These cookies go by so many different names, Russian Tea Cakes, Mexican Wedding Cookies (they were served at my friend’s wedding in Venezuela), Snowballs, the list goes on. I was tired of saying all these names so I decided to name them Sweet Balls of Butter which pretty much sums it up.
Sweet Balls of Butter
Makes about 3 dozen
1 cup butter
1 teaspoon vanilla extract
6 tablespoons confectioners sugar plus 1/3 cup to coat
2 cups all-purpose flour
1 cup chopped walnuts (or pecans)
Preheat oven to 350F. In a medium bowl, cream butter and vanilla until smooth. Combine the 6 tablespoons confectioners sugar and flour; stir into the butter mixture until just blended. Mix in the chopped walnuts.
Roll dough into 1 inch balls, and place them 2 inches apart on an ungreased cookie sheet.
Bake for 12 minutes. When completely cool, roll in remaining confectioners sugar. This time I was feeling lazy so I put them in a ziploc bag, added the sugar and gently tossed them around to coat.
