This recipe came courtesy of Grandma when I requested carrot recipes. It’s basically carrots glazed in butter and Grand Marnier. If you are not familiar, Grand Marnier is an orange flavored liquor. Orange is a common ingredient in carrot dishes and I am all about using alcohol in cooking so I decided to give it a try. Good recommendation Grandma!
Grand Marnier Glazed Carrots
I peeled and cut a few carrots into bite sized pieces, put them into a pan with a little water. Cover and bring to a simmer, cook for a few minutes until carrots are just tender. Drain remaining water and return to stove over low heat. Add 1 tablespoon butter, salt and pepper and cook for a few minutes, stirring often. Remove from heat to add a couple splashes Grand Marnier. Return to heat and cook until the liquid has mostly evaporated. Season with salt and pepper to taste.
