Yesterday, I made pickles. It was my first attempt and I have to say it was fairly successful. I had a cucumber leftover from my CSA and I’ve been meaning to try my hand at pickling. After sitting for only an hour and a half, they tasted like pickles! Fancy pickles no less. After sitting for a day I can definitely taste the garlic. They have a nice sour flavor with a hint of sweetness and spice. I had no idea it was so easy and quick. I see more a lot picking in my future.
I read lots of recipes for pickles and decided to base it mostly on this one.
Pickles
I used one regular sized cucumber for this recipe. I didn’t measure so these amounts may need to be adjusted. In a small sauce pan, I heated 2 tablespoons water, 1/4 cup apple cider vinegar, 2 teaspoons sugar, 2 tablespoons dill, 1/4 teaspoon salt and 1/8 teaspoon crushed red pepper until warm. Pour mixture over thinly sliced cucumbers and 2 cloves of garlic sliced. Let sit at room temperature for 2 hours, stir occasionally, before storing in the refrigerator.
