When I saw another cucumber this week, I thought more pickles? Since my first attempt at pickling turned out so good I am really tempted to try another recipe.

3 Beets (I swapped these for another bunch of scallions)
1 bunch Scallions
1 head Red Boston Lettuce
1 lb. Squash
8 oz String Beans
I love throwing scallions in lots of dished so I was happy to have an extra bunch. I will be frying up some of the squash this week. Maybe I’ll even make a squash parmesan with it.
