This has been an incredibly busy summer. We are 8 weeks into CSA season and I’ve only posted a couple recipes using these delicious vegetables. I wish there was more time in the day to cook and blog. This week was another good pickup. I have some corn from the farmers market that I wanted to make soup with and I was hoping to get a bunch from the CSA. My wish was granted. I also got my wish for more lettuce.

1 bunch Cilantro
1 bunch U-choy (I think)
1 head Romaine Lettuce
1 head Red Boston Lettuce
1 bunch Beets
1 bunch Scallions

Alyson, can you possibly send me your recipe for corn soup? They farms here in PA. all have their corn for sale and I am going to make a corn salsa later today, but I would like to try corn soup. Also, we now have a great farm near us, it’s all organic and it’s called Annie’s Acres. She always has amazing veggies. Thanks so much.

Vegetables straight from the farm are the best! I made this corn soup without a real recipe so good luck! I used grilled corn but you could make it with uncooked corn.
