There are not enough hours in the day! Tonight, I got home from work at 8:30, which leaves me with only a few hours before bed. One of the first things I pass up on nights like this is cooking. Luckily, I had a fridge well stocked with leftovers. I had some arugula (I love that it is also called rocket), grilled chicken and rosemary roasted potatoes. I made a salad with the arugula, chicken and a purple carrot which I’ve been dying to eat since I got them last night.
Look at that color! Food tastes better when it looks this pretty.
I had it with a simple balsamic vinaigrette and some grated Pecorino. The cheese went great with the arugula! I’ve got another new favorite flavor combo.


pretty! do the purple carrots taste different then regular carrots?
Yes! They are so good. You know that bitter flavor carrots sometimes have? These don’t have that, they are nice and sweet. The white ones however are the opposite. I am not a fan which is why I gave them all to my coworkers!
